Power Waffles

Whenever I see my mom she wants me to make power waffles. She got her wish last weekend. I got this recipe from Bon Apetit. I'm sure I've tweaked it a bit. It took a little bit to find some buckwheat flour, but I had everything else in the house. I start this the night before because I don't want to have to wait an extra hour in the morning for breakfast. I use candied ginger instead of crystallized because it is easier to cut up and makes less of a mess.

Power Waffles

2 1/2 c. warm soy milk or rice dream
1/4 c. finely minced candied ginger
2 Tbl. sugar
1 tsp. dry yeast
1 1/2 c. flour
1 c. buckwheat flour
2 tsp. nutmeg
1 c. old fashioned oats
1 tsp. salt

6 large egg whites, beaten to blend
6 Tbl. butter, melted
2 tsp. baking powder
1 tsp. vanilla

1. Mix first 4 ingredients in bowl to blend.
2. Let mixture proof 10 minutes.
3. Mix dry ingredients together.
4. Add dry ingredients to yeast mixture and stir to blend.
5. Chill mixture one hour or overnight.
6. Mix egg whites, butter, baking powder, and vanilla into chilled mixture.
7. Cook waffles in waffle iron.

Serve waffles with yoghurt, honey, and bananas.

Waffle-ah

I'm not sure why, but I've decided that the plural of waffle is waffle-ah. I'm having fun with the new waffle maker and I've made several different kind of waffles. When Tejal was here I made triple ginger waffles. I added ginger powder, fresh ground ginger, and minced candied ginger to the basic recipe. They were tasty with butter and honey.
This past weekend I made double cherry waffles.  I added chopped up dried tart cherries to the basic mix and made a cherry topping. I added brown sugar and Disarrono to some tart cherries with juice and cooked it for a while.  I thickened up the sauce with a little corn starch and topped off the waffle with a little whipped cream--from a can!  Ha!
The June issue of bon appetit has a recipe for blueberry shortcake with lemon and thyme biscuits. The picture makes it look so scrumptious.  I really want to try this recipe, and cherries are on sale, so I might make it with fresh cherries.

Pineapple Waffles

When we moved I got rid of our old waffle maker.  I've been looking for a new one and ended up buying a Belgian flip waffle iron at Target.  I decided to surprise Ross yesterday with pineapple waffles for lunch.  He had butter and maple syrup on his.  I had Greek yoghurt, banana, and honey on mine.  The waffles were good and so far I like the waffle maker.  The recipe is from the 1943 edition of The Joy of Cooking.  I omitted any sugar per my dad's rule.  And of course, I added some things.

Pineapple Waffles

1 3/4 c cake flour
3 tsp. baking powder
1/2 tsp salt
cinnamon
nutmeg

3 eggs, separated
6 Tbl. melted butter
1 1/2 c. milk
vanilla

1/2 c. drained, crushed pineapple

1.  Sift dry ingredients into a bowl.  Make well in center of dry ingredients
2.  Beat the egg yolks well and add to dry ingredients.
3.  Add butter, milk, and vanilla.
4.  Mix batter, leaving a few lumps.
5.  Fold in pineapple.
6.  Beat 3 eggs whites until stiff, but not dry.
7.  Fold in egg whites.
8.  Cook in waffle iron.

The pineapple texture was more obvious than the taste, but I liked them.
